Tomato-Cream Made out of Dried Tomatoes and Cashew Sour Cream
Als ich vor kurzen Abends meinen tumbler-reader durchblätterte, stieß ich auf ein wunderschönes Bild von getrockneten Bananen. Ich suchte den dazugehörigen blog auf und las über das Dörren von Bananen, was in mir sofort den alten Wunsch hochkommen ließ, auch ein Dörrgerät zu besitzen. Gerade jetzt für meine vegane Küche, stellte ich mir das gut geeignet vor, um noch mehr neue Ideen zu verwirklichen. Ich konnte sogar meinen Mann von diesem Projekt überzeugen, da er selber sehr gerne so etwas isst. Ich wusste, dass es sehr große Preisunterschiede bei den Geräten gibt, und damit sicherlich auch Qualitätsunterschiede. Aber ein teures konnte ich mir auf keinen Fall leisten. So habe ich ein bisschen recherchiert und ein Gerät im Preisrahmen erstanden, was recht gute Kritiken hatte. Dazu bestellte ich mir noch ein Buch (Extra Dry, trocken & dörren – kochen & genießen, Sabine Hans), und das ist außergewöhnlich gut, da hab eich einen Glücksgriff getan, ich werde daraus bestimmt noch einiges hier vorstellen, allein die Fotos darin sind toll, aber ihr wisst ja: Ich liebe Kochbücher .
Als das Gerät ankam habe ich gleich einen Versuch gestartet , und alle Obstsorten die ich hatte durch getestet, am nächsten Tag kamen dann die Gemüsesorten dran. So hatte ich schon meine ersten Erfahrungen gesammelt.
Daraufhin, weil die Tomaten so gut ausgefallen waren und die Zwiebel auch, beschloss ich eine Tomaten-Creme zu machen. Dafür habe ich meine Cashew-Schmand genommen, die ich immer nach dem gleichen Muster herstelle: 100 g eingeweichte Cashew-Kerne (3-4Std.) 100 ml Wasser, 1/2 Zitrone und eine Prise Salz. Dies wird im Vitamix kräftig durch gemixt, dann füge ich 1 Tasse getrocknete Tomaten und ½ Tasse getrocknete Zwiebeln zu und püriere das ganze schön fein.
Ich verwende hier jetzt keine anderen Kräuter oder Gewürze, das mache ich dann immer unterschiedlich. Am liebsten mag ich die Creme auf selbst gebackenem Schwarzbrot und oben drauf kommt dann noch eine frische Tomate und etwas Kresse, Sprossen oder Basilikum. Das ist zur Zeit mein Favorit beim Frühstück, aber genauso gut kann man die Creme zum Dippen nehmen, und abends aufs Brot. Ich kann es kaum erwarten, meine eigenen Tomaten zu dörren, die ja wesentlich besser schmecken, als alles was ich jetzt im Winter zu kaufen bekomme. Aber bis dahin muss ich noch eine Weile warten.

One evening I was going through the blogs I follow on tumblr and found this amazing picture of dried bananas; I looked up the blog and read more about dehydrating fruits and vegetables. I always wanted to try this myself and I think for the vegan cuisine it´s a nice addition to make the meals more diverse. Even my husband was convinced, so I was looking up those dehydrators online and found them from „cheap“ to really expensive – I didn’t wanna spend so much money on a kitchen helper again so I decided on a reasonably priced one. Besides that, I ordered a book about dehydrating and that was a great choice. You know I love kitchen books LINK and this is one of those great ones – amazing pictures and creative, unique recipes.
When the machine arrived I did a first try: the first night I dried simply all different kind of fruits I had at home and the next day I repeated it with vegetables. These were my first experiences with a dehydrator.
Well, the tomatoes and onions turned out really well so I decided to make a tomato cream out of it. My cashew sour cream is a great base for it; I use 100g soaked cashews, 100ml water, half a lemon and some salt. I mix all the ingredients with my Vitamix. I then added a cup dried tomatoes and half a cup dried onions and put it back in the Vitamix to make a smooth cream. You can add spices to your liking, I always vary with that.
I prefer this cream on homemade dark bread topped with a fresh tomato and cress or basil. This is my favorite for breakfast at the moment, but you can use it as a dip as well. I really can’t wait to dry my own tomatoes this season, they’ll be even better! But until then I have to be patient.
