Coconutcurry with Celery, Sunchoke and baked Pumkin
das ist ein Weg, den ich gehen möchte. Ich taste mich ran, probiere aus, bin neugierig. Es ist nicht nur eine Ernährungsfrage, sondern es geht um mehr. Es ist eine Philosophie, eine Lebenseinstellung.
Ich werde an dieser Stelle darüber berichten, es soll nicht missionarisch sein, jeder geht seinen Weg. Es sind Anregungen und Möglichkeiten, jeder hat die Wahl.
Staudensellerie war im Angebot und sah gut aus, also wurde um ihn herum geplant. Der Kürbis muss dringend gegessen werden, ich habe noch ca. 30 Stückauf dem Heuboden. Topinambur ist auch mehr als genug. So beschlossen wir ein Curry zu kochen, und als Experiment, statt Kokosmilch aus der Dose, haben wir die Kokosflocken in etwas Wasser quellen lassen und dann im Vitamix püriert und dann weiterverarbeitet.
Die Kürbisspalten werden mit Cape Malay Öl eingepinselt und kommen dann für 40 Minuten in den Ofen.
In der Zwischenzeit den Staudensellerie dünsten. Den Topinambur kochen und pellen.
Für die Currysauce dünste ich eine Zwiebel, ein Stück Ingwer und Currypulver an, dann kommt das Kokosmus dazu, mit etwas Gemüsebrühe auffüllen und mit Zitrone, Salz, Pfeffer abschmecken.
Über das Gemüse geben und mit den Kürbisspalten anrichten. Ich habe noch etwas schwarzen Sesam auf den Topinambur gestreut, das sieht hübscher aus.
Wie ich finde, ein ausgewogenes veganes Essen, wo nichts fehlt, und ich nachher beim Bauchtanz keine Probleme haben werde, weil mir das Essen zu schwer im Magen liegt.

That´s the way I wanna go. I´m curious, slowly getting more into it, trying out new things. It´s not just about the diet, it´s more for me. A philosophy, an attitude towards life.
And I will report about it here; I don´t want it to be missionary or anything. Everybody´s got their own way. These are just inspirations and possibilities. In the end it´s you who chooses.
When I went grocery shopping, celery was on sale and it looked good. So I planned the meal around this main ingredient. I still have 30 pumpkins sitting on my attic, they need to be eaten soonish, so there was the next ingredient. I got more than enough of the sunchokes. Thus I decided to prepare a curry, but instead of using canned coconut we used coconut flakes, had them soaked and then puréed using my Vitamix.
I brush the pupmkin slices with the Indian Cape Malay oil and let them bake for around 40 minutes. In the meantime fry the celery at low heat; boil and peal the sunchokes.
For the curry sauce I braise an onion, then add fresh ginger and curry powder before mixing in the coconut purée. To make it more liquidy I added some veggie broth and seasoned it with lemon juice, salt and pepper.
Then simply pour it over the veggies and decorate with the pumpkin slices. To make it look fancier, I sprinkled black sesame seeds on top of the sunchokes.
In my opinion it´s a well balanced vegan dish that´s not missing anything and I´ll still be able to have fun at my bellydance lessons later ´cuz it won´t be too heavy in my stomach.
