Buchweizen-Kichererbsen-Reis-Puffer mit Erbsen und Kürbis-Chutney
Buckwheat-Chickpea-Rice Pancakes with Green Peas and Pumpkin Chutney
Eigentlich wollte ich ein altes Rezept mit Reis-Puffer mal wieder machen, aber irgendwie ging die Fantasie mal wieder mit mir durch und so ist diese bunte Mischung herausgekommen, und ich kann nur sagen, es ist super gelungen – außen knusprig und innen fluffig weich, dazu toll gewürzt, das führte dazu, dass ich etwas übermäßig zuschlug und für meinen lieben Mann gar nicht so viel übrig blieb. Als Ersatz werde ich ihm morgen die gewünschten Kakao-Cranberry-Taler machen.
Für die Puffer habe ich den Reis (100g) über Nacht eingeweicht. Buchweizen (100g) braucht nicht so lange weichen, das waren am gleichen Tag 3 Stunden, die Kichererbsen hab ich aus der Dose genommen, da ich gerade eine da hatte. Dann wurde alles abgegossen und gründlich gespült, nun hatte der Vitamix seinen Einsatz, zu den Hülsenfrüchten kam noch ca. ¼ l Flüssigkeit (ich habe Mandelmilch genommen), alles gut durchmixen. Gewürzt habe ich mit Kümmel, Pfeffer, Ras el Hanout und Dal-Gewürz. Gut ist es, wenn die Masse nachher vom Löffel tropft, denn es klebt sehr, so dass man keine Hilfsmittel benutzen kann. In der Pfanne mit Distelöl schön kross ausbraten, nachher noch auf einem Küchenkrepp abtropfen lassen, sonst ist es zu fett.
Dazu habe ich tiefgekühlte Erbsen aufgetaut, d.h. ca. 5 Minuten in Salzwasser mit einer Prise Zucker 5 Minuten gekocht.
Ein Schmankerl dazu war dann mein selbstgemachtes Kürbis-Chutney aus dem letzten Jahr. Da hatte ich so eine große Kürbisernte, dass ich etliche Gläser Chutney gemacht habe, das war auch gut so, denn die Ernte dieses jahr fiel eher mager aus.
Das Rezept für das Chutney habe ich aus England mitgebracht, und es ist wirklich gut, mit getrockneten Aprikosen, Mandeln und Koriandersamen. Ich werde das Rezept einmal später reinstellen, denn an dieser Stelle würde das den Rahmen sprengen. Es ist eine etwas zeitaufwendige Sache, ich stehe für eine Ladung 2 Stunden am Herd, immer rühren, aber der Aufwand lohnt.
Aber zum Puffer schmecken auch andere Saucen und Chutneys, da kann man ganz flexibel sein.

I just wanted to use one of my old recipes to make those rice pancakes, but then my fantasy took over and this was the result. I gotta say they turned out great, crispy on the outside and fluffy on the inside with a special flavor to it. They were so good that I ate too much and didn’t really have too much left for my husband. I´ll make him the cranberry cookies from a few days back again – he´s crazy ‚bout them!
For the pancakes I had 100g rice soaked in water over night, the buckwheat doesn’t have to soak as long, around three hours the day you make them is enough. I used one can of chickpea which I still had left over. Next drain all the ingredients and then it´s time for the Vitamix. I added 1/4l of almond milk to it before mixing it; for the right consistency the dough should drip off a spoon – if it´s too viscous it´ll be a mess!
Fry in a hot pan with thistle oil until golden brown and let them drain on a paper towel.
I served them with green peas which I had in the freezer.
A very neat bonus is my homemade pumpkin chutney from last season when I harvested so many pumpkins so that I made several glasses of the chutney. This season the pumpkins didn’t do too well so I was lucky that I made enough last year. I found the recipe for the chutney in England and it is amazing, with dried apricots, almonds and cilantro seeds. I will post the recipe at a later point ‚cuz it´s too much for here and now. It takes me around two hours to make the chutney, you gotta stir it constantly, but so worth it.
Back to the pancakes. You don’t have to have this chutney, other sauces are fine as well.
