Great for spaghetti muffins and Tarte Flambee
Das habe ich mich gefragt, als ich letzte Woche in einer veganen facebook-Gruppe eine leckere Quiche sah, die mit dem besagtem Hefeschmelz gemacht war. Das wollte ich genauer wissen, googelte ein bisschen, und das Rezept für diese Sauce, die sich besonders gut zum Überbacken eignet, überzeugte mich, so dass ich gleich 2 Gerichte damit ausprobiert habe. Vorab, ich bin wirklich begeistert vom Geschmack, der ist ist kräftig, aber nicht zu würzig, und man kann eine Unmenge von Varianten ausprobieren. Heute zum Einstieg nur das klassische Rezept.
Da ich im Muffin-Fieber bin, habe ich einmal Spaghetti-Muffins gebacken, die wirklich super im Geschmack waren, aber ehrlich, für mich ist das zu viel Fummelei. Da bin ich ja am Ende hungriger als vorher, bei der Feinarbeit. Ich nehme also das nächste Mal für diese Zutaten eine Auflaufform, und schichte analog.
Weiter haben wir Flammkuchen mit grünem Spargel und Walnüssen mit dem Hefeschmelz vereint, auch sehr gut. Der grüne Spargel ist nicht zwingend, hat nicht so viel Geschmack, ich könnte mir da auch andere Gemüse vorstellen, aber war trotzdem lecker.
Nun zu den Rezepten:
Hefeschmelz:
4 Eßl. Margarine schmelzen
6 Teel. Mehl dazu
250 ml Wasser einrühren, köcheln
8 Eßl. Hefeflocken einrühren
1 Teel. Senf
Pfeffer, Salz abschmecken
Spaghetti-Muffins
250 g Spaghetti bissfest kochen, ich habe Vollkorn-Nudeln genommen
Gemüse nach Wahl klein würfeln.
1 Paprika, ½ Zucchini, 2 Frühlingszwiebeln, 2 kleine Tomaten, 1-2 Eßl. Kapern, Nudeln kleinschneiden und mit dem Gemüse mischen, 2 Eßl. Bärlauch- Pesto unterrühren, in die mit Papierförmchen ausgelegte Muffinform füllen.
Hefeschmelz darauf verteilen und mit Thymian bestreuen.
Ich habe im Küchengarten eine Thymianhecke, so dass ich frischen nehmen konnte, ihr könnt aber auch getrockneten nehmen. Jetzt im Backofen bei 180°C 25 Minuten backen. Vorsichtig mit einem Löffel aus der Form heben.
Warnung, das Ganze ist nichts für Grobmotoriker, wie ich es bin!!!
Flammkuchen mit grünem Spargel:
Hefeteig:
250 g Mehl Dinkelmehl 630
½ Päck. Hefe
125 ml lauwarmesWasser
1 Prise Salz
alles zum glatten Teig verkneten und 30 Minuten zugedeckt gehen lassen.
Backofen auf 250°C vorheizen.
1 Pfund Spargel längs in dünne Streifen schneiden, hobeln.
50 g Walnüsse klein hacken.
Den Teig vierteln und 4 Fladen ausrollen, für 2 Bleche, schön dünn.
Den Flammkuchen mit Hefeschmelz bestreichen, ich habe Thymian untergemischt. Spargel drauf verteilen, Walnüsse auf den Spargel, ganz leicht zuckern. Dann 12 Minuten backen. Ich habe mir noch etwas Pesto oben drauf getan, mit Olivenöl beträufeln ist auch möglich.

I asked myself this question when I saw the picture of a quiche in a vegan Facebook group. I wanted to know more so I googled this yeast glaze and the recipe sounded great – I ended up trying it with two different dishes. The flavor is great, it’s hearty, but not too much and you can use it for almost everything or even alter the sauce itself. For the beginning the basic recipe.
I’m really in love with muffins recently so I made those spaghetti muffins which had an excellent flavor, but it was too much work for myself – I’m more hungry afterwards with all those tiny things to do. Next time I’ll use a plain ovenproof pan for this dish.
Next, we combined Tarte Flambee with green asparagus and walnuts with the new yeast-glaze sauce. The asparagus is probably not the best veggie for it – the flavor is rather subtle. Next time I’d try others, but nonetheless it was delicious!
Here are the recipes:
Yeast Glaze:
Melt 4Tbsp margarine in a pot
Add 6tsp flour as well as
250ml water, let it boil for a little, then add
8Tbsp yeast flakes (this is deactivated yeast, it’s NOT the yeast you use for baking!)
1tsp mustard
add salt and pepper to your liking.
Spaghetti Muffins:
250g whole wheat spaghetti, cooked al dente.
Chop veggies to your liking – I used 1 bell pepper, 1/2 zucchini, 2 spring onions, 2 small tomatoes, 1-2tsp caper.
Cut the spaghetti to a shorter length and mix with the veggies and 2tsp pesto. Place the mix in the muffin forms and pour some of the sauce over them before sprinkling with thyme. I have a lot of thyme in my veggie garden so I chose fresh one, but dried works as well. Bake at 365F for around 25mins. Carefully take the filling out of the muffin forms.
Note: This ain’t the job for clumsy people like me!!!
Tarte Flambee with Green Asparagus:
Dough:
250g spelt flour
1/2 pck yeast
125ml warm water
a hint of salt
Combine everything to a smooth dough and let it raise for thirty minutes. Preheat the oven to 420F. Cut 1lb asparagus in to long slices. Chop 50g of walnuts. Divide the dough into 4 even parts and roll until really thin.
Add some of the yeast glaze on the tartes – I added the thyme to the sauce already. Place the asparagus slices and walnuts on top. Sprinkle some sugar before baking for 12mins.
I served them with a little bit of pesto on top, but you can simply use olive oil as well.
